Using your starter past peak can lead to more consistent proofing and a fluffier final loaf! . The slight drop in the starter means the yeast has already done most of its expansion work, allowing for a steadier, more predictable fermentation when incorporated into dough. Plus, the slightly increased acidity at this stage helps strengthen gluten, improving structure without over-proofing too quickly. . ✨SAVE✨ this for later…here’s a solid starter feeding regime: FEED your starter a 1:5:5 ratio 15

How can you tell when your sourdough starter has reached its max rise after a feeding?? Here are some indicators your Sourdough Starter has peaked ⬇️ 🫙 Doubling or Tripling in Volume: A healthy starter should double or even triple in volume within 4-8 hours after a typical 1:1:1 feeding. You can mark the level of the starter with a rubber band or a marker on the jar to track its rise. You will also notice it start to flatten on top instead of being domed. 🫧 Bubble Formation: Look for a signifi

How to Strengthen and Deacidify Your Sourdough Starter - The Peak-to-Peak Method This video is after three feedings. The "before" video is in the first comment. I've posted on the Peak-to-Peak feeding method in the past. Here is a real example. I took a hoochy, unfed starter from the refrigerator and applied the method. I poured off the hooch and scooped out 10g of the good stuff and moved it to a new jar. I fed it 20g flour and 20g water (1:2:2) feeding. I waited for the starter to peak. It too

I don’t know who needs to see this, but you should be USING your sourdough starter at its peak height. The peak of a sourdough starter is when the starter has the most active wild yeast and bacteria. You sometimes hear this referred to as “active” sourdough starter. If you use it before it reaches its peak, you won’t have as many wild yeast/bacteria. If you use it significantly after the peak, as the starter is going back down, you have a lot of wild yeast and bacteria but they are hungry—which

This is my sourdough starter at peak activity. The most common question I get: “When is starter ready to use?” My short answer: 👉 At peak activity. It should double or triple in size, be full of bubbles and feel light and airy. That’s when it’s at its strongest. Do you use your starter at peak or after it starts to fall? 👇 #sourdoughstarter #artisanbread #breadbaking #homebake #sourdoughbaking | Nataliya Dolynska

This is how I feed my sourdough starter before baking. I use a 1:1:1 ratio (starter : flour : water). After feeding, I let it rise until it reaches its peak — usually around 6 hours. Strong, active starter = better oven spring 🤍 Save this for your next bake ✨ #sourdough #homemade #homemadebread #ekşimayalıekmek #ekşimayabesleme | TheBakery Lila

Tip #1: Put your starter in the fridge at peak if you can’t bake with it right away. It will hold for at least 2 days and be ready to use straight from the fridge. The longer you keep your starter in the fridge, though, the weaker it will become. So I generally keep my starter on the counter, feeding it 1-2x per day. I stick it in the fridge when I'm in a pinch, so it's more of an exception to the rule for me. If I put it in the fridge too much, it weakens and I have to take extra time perking i

Is an off-shoot of your sourdough starter, a mixture of ripe starter (a starter that has been fed and reached the peak), water and flour This mixture will be used entirely to prepare your dough. It’s essentially your pre ferment, which will help rise the dough, and also be responsible for the flavour A leaven is most useful when you need to scale up and make more loaves of bread at the same time. Especially when you keep a small amount of sourdough starter In which case you will first feed your
